Caprese Salad and asparagus with parmesan cheese

Yesterday I was really fancy something light for late lunch/tea so made Caprese salad which is really fresh and light and asparagus cause we`ve got a season for this veg.


I`ve used 2 packs of tops of asparagus, you can use whole ones
2 tbsp of olive oil
1 tbsp of butter
pinch of salt
pinch of pepper
1 tbsp grated Parmesan cheese, you can use grana padano too

Pour the olive oil into the baking dish, put the asparagus in, cover well with oil, sprinkle with salt and pepper, and bake in the preheated to 170C oven for 20 minutes. After that time check by fork if are they soft enough, if not, keep them a little bit more in the oven. After that sprinkle with Parmesan and serve.

serves 2

4 tomatoes
pack 250g of mozzarella, I used the small balls, which can be one big tear into smaller bits
half a bunch of basil
2 tbsp olive oil
salt, pepper for seasoning

Cut tomatoes into smaller chunks, put them in the bowl with mozzarella and chopped basil, mix with olive oil, salt, and pepper, and serve.
