Makes 2 Quesadillas, and serves 4-6

  • 4 x 12″ Tortillas
  • 1 cup of cream cheese, warmed to room temperature
  • 1 cup of refried beans
  • 2 cups of grated cheddar cheese (or substitute with your favorite cheese like Monterrey Jack)
  • 1 cup of diced olives (green or black)
  • 1 chopped green onion
  • 1 package of taco seasoning
  • 2 tbsp of Tobasco chipotle hot pepper sauce (optional)
  • 2 tbsp of olive oil
  • 1/2 cup of sour cream
  • 1 cup of guacamole
  1. Spread cream cheese on one side of all four tortillas.  Be sure to spread evenly and over the complete surface of the tortilla
  2. Take one tortilla, and spread half of the refried beans on top of the cream cheese
  3. Spread out the grated cheese over the refried beans
  4. Apply a layer of olives, green onions, and any other toppings you like on top of the tortillas
  5. Sprinkle on the taco seasoning, and Tobasco hot sauce (optional)
  6. Finish the quesedilla by covering it with a tortilla shell.  The result should look like a tortilla sandwich
  7. Fry each side of the quesadilla in a frying pan.  Fry to golden brown on each side, and remove from heat onto a cutting board
  8. Using a pizza cutter or long sharp knife, cut the quesadilla into six pie-shaped pieces
  9. Serve with sour cream and/or guacamole for spreading, and sprinkle with green onions as garnish
