These Quesadillas take 5 minutes to prepare, and 5 minutes to cook. They’re kid-friendly, tasty, and very easy to make.

Makes 2 Quesadillas, and serves 4-6
Ingredients:
- 4 x 12″ Tortillas
- 1 cup of cream cheese, warmed to room temperature
- 1 cup of refried beans
- 2 cups of grated cheddar cheese (or substitute with your favorite cheese like Monterrey Jack)
- 1 cup of diced olives (green or black)
- 1 chopped green onion
- 1 package of taco seasoning
- 2 tbsp of Tobasco chipotle hot pepper sauce (optional)
- 2 tbsp of olive oil
- 1/2 cup of sour cream
- 1 cup of guacamole
- Spread cream cheese on one side of all four tortillas. Be sure to spread evenly and over the complete surface of the tortilla
- Take one tortilla, and spread half of the refried beans on top of the cream cheese
- Spread out the grated cheese over the refried beans
- Apply a layer of olives, green onions, and any other toppings you like on top of the tortillas
- Sprinkle on the taco seasoning, and Tobasco hot sauce (optional)
- Finish the quesedilla by covering it with a tortilla shell. The result should look like a tortilla sandwich
- Fry each side of the quesadilla in a frying pan. Fry to golden brown on each side, and remove from heat onto a cutting board
- Using a pizza cutter or long sharp knife, cut the quesadilla into six pie-shaped pieces
- Serve with sour cream and/or guacamole for spreading, and sprinkle with green onions as garnish
