Sweet Heat Chipotle Barbecue Sauce

You’ll need a pile of napkins for this amazing Sweet and Spicy Chipotle Barbecue Sauce.  It’s messy, thick, and finger-licking good.  Great with any barbecue dish, especially Beef Ribs, which stand up well to the sweet heat of this home-made barbecue sauce.

Preparation time: 15 minutes

Cooking time: 20 minutes


  • 2 tbsp of vegetable or canola oil
  • 1 tbsp of paprika powder
  • 1 tbsp of ground cinnamon
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of ground allspice
  • 1 tsp of ground cumin seeds
  • 1 yellow onion, finely chopped
  • 2 cloves of minced garlic
  • 2 chipotle pepper
  • 2 tbsp of adobo sauce (this is the sauce that the chipotle peppers are canned in)
  • 1 5.5 oz (156 ml) can of tomato paste
  • 1 bottle of beer (try to use a full-flavored beer, and preferably not light beer)
  • 1 tbsp of red wine vinegar
  • 1 tbsp of brown sugar (or more, to taste).  Honey is an acceptable alternative
  • 1 tsp of soy sauce
  1. In a sauce pan, fry the spices in oil.  Be careful not to burn the spices by frying them in oil that is too hot
  2. Add the chopped onion to the spice mixtures.  Render down the onions until soft
  3. Add the minced garlic, frying for another 1-2 minutes.  Careful, garlic burns easily
  4. Add 1 cup of beer and tomato paste to the sauce pan, and mix well
  5. Remove 2 chipotle peppers from their can, and open them up to remove their seeds.  With only the skin of the chipotle pepper remaining, give it a fine chop, and add to the sauce pan.  Note, chipotle peppers are HOT, so add more or less to adjust to your taste.
  6. Add the adobo sauce to the sauce pan.
  7. add the wine vinegar, soy sauce, and sugar to the sauce pan.  Add more beer if the sauce is too thick at this point.  Mix well, and adjust the sugar and soy content to meet your taste/expectations of how sweet/salty you want this sauce to be.  The wine vinegar adds some ‘tang’ to the taste.  Add more or less to your taste
  8. Heat to a boil, and quickly reduce to a low simmer for 15 minutes.  This will help the chipotle peppers mellow out, and the flavors to come together
