“Sure Thing” Beef Ribs in a Chipotle BBQ Sauce

In this recipe, I show you how to ‘cheat’ a little to create amazing Beef Ribs — combining braising of beef ribs, and barbecue grilling for a perfectly tender, sweet, and spicy Barbecue Beef Rib Recipe with home-made Sweet Heat Chipotle Barbecue Sauce.

Beef Ribs with Home Made Chipotle BBQ Sauce

The secret is to first bake the ribs in the oven over a low temperature until they are almost falling off the bone, and then grill them in barbecue sauce for 5-10 minutes to capture that smokey barbecue flavor and crispiness.  You can find the HD Video and full recipe here:

Preparation time: 15 minutes, plus 4 to 24 hours of marinating the beef in the spice rub

Cooking time: 2 hours 30 minutes

Serves: 4-6 people


  • 2 kg or 4 lb of beef ribs
  • 1 tbsp paprika powder
  • 1 tbsp ground cinnamon
  • 1 tbsp of ground cumin
  • 1 tsp of ground allspice
  • 1/2 tsp of cayenne pepper (optional)
  • 3 large yellow onions, chopped 1/2 inch thick
  • Barbecue Sauce – I recommend my ‘Sweet Heat Chipotle Barbecue Sauce

For the Spice Rub:

  1. Combine paprika, cumin, allspice, cinnamon, and cayenne peppers.  Mix well and transfer to large Zip-Lock (Ziploc) bag.  Cut ribs into two rib-bone pieces, and put beef ribs into Zip-Lock back for overnight marination.  Be sure that Beef Ribs are well-coated with spice rub.

To Prepare the Beef Ribs:

  1. Slice onions to layer the bottom of a large aluminum roasting pan.  Remove beef ribs from Zip Lock bags, and place evenly over the onions.  Cover with aluminum foil and place in oven for a minimum of 2-2.5 hours at 300 degrees F, or longer if necessary.  Remove from oven when beef is separating from the beef rib bones, but not completely falling off.  You want to preserve the appearance of the beef ribs, and they will further cook down on the BBQ, making them slightly more tender.
  2. Place ribs in large nonreactive bowl, and toss in Barbecue Sauce, coating well.  Check out this link for my Sweet Chipotle Barbecue Sauce, or use your own Barbecue Sauce;  Home-made or store-bought — whatever works for you.
  3. Place BBQ Sauce-coated Beef Ribs on a barbecue grill on medium-high heat, and grill on all sides for 5-10 additional minutes, adding additional barbecue sauce to keep the beef ribs moist.  Remove from grill when slightly crispy on the outside, and serve with your favorite side, like my Creamy Dill and Cucumber Potato Salad, which cuts the heat of the Chipotle Barbecue sauce nicely.
